Plethora Fine Foods will soon call the Gibsons Public Market home.

In January 2024, the shop of locally sourced foods will be leaving Sechelt after six years at its Cowrie Street location. Its new set-up will be on the downstairs Merchant Floor of the market, where Plethora Fine Foods will supply fine cheeses, locally-made charcuterie boards and boxes and meats. A take-out bar will feature gourmet salads, sandwiches, snacks, in-house paninis and specialty ingredients.

“We’re thrilled. We’ve been holding the space because we wanted the right food merchant. We wanted someone that would complement what our other merchants are offering, and make sure that we have everything fresh for a meal. It’s one-stop shopping,” Pam Robertson, board chair of the Gibsons Community Building Society, told Coast Reporter.

She also expressed excitement about the owner of Plethora Fine Foods, James Covell’s background as a chef. The Gibsons Public Market’s merchant food includes a community kitchen and a commercial kitchen.

“He’s really looking forward to getting back into cooking. It will enliven the space,” Robertson said. A press release details Covell’s plans to host long table dinners, fondue nights, and wine and cheese tastings among other special events. “He’s got some great ideas about food events,” she added.
